Vegan Blueberry Protein Pancakes

What is a better way to start the day then with pancakes, especially protein ones. I have the perfect American Style Fluffy pancakes with a simple, easy to follow recipe! On of my favourite things about pancakes is the filling and freedom to make them how you want them. The possibilities are endless, but today we are going to go slightly more healthy and add blueberries and fruit.

 

45g Oats

15g Vanilla Protein

150ml Milk Alternative

30g Blueberries

1/2 tsp Baking Powder

1/4 Banana

 

Add all the ingredients above apart from the blueberries into a blender. Blend these ingredients together until mixed well and there is a smooth consistency. Add the blueberries and leave the mixture in the fridge to thicken for 10 minutes.

Spoon the mixture onto a non-stick frying pan, on a medium to low heat (too hot and pancakes will burn). After a couple of minutes if you notice little bubbles appearing on the surface, flip the pancakes over. Once an even golden colour begin to stack them to add toppings (I heated frozen fruit to make a compote).

 

These are so quick and simple to make, easily becoming my favourite breakfast.
